This composite yeast consists of thermostable Saccharomyces cerevisiae, acid protease, phytase, cellulase, beta-glucanase, and pectinase. The composite yeast significantly improves the fermentation efficiency, increases the final alcohol content in the mash, and reduces the content of residual reducing sugar and starch thereby reducing the pressure to the environmental protection.
